Ingredients:

  • 500g jar Homepride Curry Cook-In-Sauce
  • 250g (8 oz) broccoli or cauliflower florets
  • 250g (8 oz) potato – cubed
  • 175g (6 oz) frozen vegetable mix eg carrots, peas, sweetcorn
  • 125g (4.5 oz) button mushrooms - halved

Instructions:

  1. Boil potatoes for 10 minutes. Add broccoli and frozen vegetable mix and boil for a further 5 minutes. Drain thoroughly.
  2. In large pan, bring sauce to a gentle simmer. Stir in vegetables and mushrooms. Cover and simmer gently for 10 minutes, or until vegetables are tender, stirring frequently.
  3. Serve with rice and enjoy!
