King Prawns with Noodles, Curry Sauce

Ingredients:

  • 500g jar of Homepride Curry Cook-In-Sauce
  • 2 tablespoon of olive oil
  • 1/2 cm fresh ginger, peeled and finely chopped
  • 1 large carrot - peeled and cut into thin strips
  • 100g/4oz mange tout - finely sliced
  • 350g / 12 oz cooked and peeled tiger prawns
  • 275g/10oz medium egg noodles
  • Small pack of fresh coriander - leaves removed

Instructions:

  1. Heat the oil in a non-stick frying pan and add the ginger, carrot, mange tout and prawns. Stir-fry them for 5 minutes until the vegetables are just soft.
  2. Add the curry sauce and allow the mixture to simmer for 2 minutes. Meanwhile cook the noodles according to pack instructions, drain them and return them to the pan.
  3. Stir in the curry and prawn mixture and scatter over the coriander leaves. Serve immediately in bowls.
