Roasted Mediterranean Chicken
and Vegetables and Provencal Sauce

Ingredients:

  • 1x500g Jar Homepride Provencal Chicken Sauce
  • 1x500g pack of chicken thighs
  • 45ml (3tbsp) Olive Oil
  • 1xMedium Courgette, cut into large chunks
  • 150g Button Mushrooms (halved)
  • 100g Shallots, peeled and quartered

Instructions:

  1. Preheat oven to 180c/Gas5.
  2. In a deep baking tray, place the chicken thighs, skin side up, and generously coat with the olive oil. Sprinkle the quartered shallots around the tray and place in the oven for 30-35 minutes until the chicken skin is nicely browned.
  3. Remove tray and add the courgettes and mushrooms. Pour over the Provencal sauce and return to the oven for 20 minutes.
  4. Serve with rice or roast potatoes.
