Lamb and Potato Hot Pot

Ingredients:

  • 450g diced lamb Shoulder (lamb for casseroles)
  • 30ml (2tbsp) Vegetable Oil
  • 1x500g jar Homepride Lamb and Rosemary sauce
  • 300g peeled potatoes, thinly sliced
  • 25g Butter

Instructions:

  1. Preheat the oven to 180C/Gas5.
  2. Heat the oil in a frying pan and add the lamb. Cook until the meat is browned all over.
  3. Place half the lamb and sauce into a deep casserole dish. Add a layer on sliced potato, the rest of the lamb and sauce, and then finish with a layer of sliced potato. Dot with small pieces of butter.
  4. Cover with foil and place into the oven for 45 minutes. Remove foil and cook for another 45 minutes until potato topping is golden brown.
  5. Serve with steamed vegetables.
