Cod with Pea Puree
and White Wine and Cream Sauce

Ingredients:

  • 295g can Homepride White Wine & Cream sauce
  • 2 cod fillets
  • 450g/1lb frozen peas
  • 1 tablespoon of olive oil
  • Salt and black pepper
  • 1 tablespoon of fresh mint - chopped

Instructions:

  1. Place the cod fillets onto a non-stick baking tray and season them with salt and pepper. Drizzle over the olive oil and then place them under a hot grill for 12 minutes until they start to brown and are cooked through.
  2. Meanwhile cook the peas in a pan of boiling water for 4 minutes until they are tender.
  3. Drain them and then roughly puree them with a hand blender. Season them with salt and pepper and stir in the mint.
  4. Once the cod is cooked, pour over the sauce and return it back to the grill for a further 4 minutes until the sauce is hot. Serve the cod on a bed of pea puree with the sauce spooned over.
