Somerset Pork Chops
with Roasted Leeks and Mushrooms

Ingredients:

  • 4x Pork Chops
  • 30ml (2tbsp) Vegetable Oil
  • 1x500g jar of Homepride Somerset Pork Casserole Sauce
  • 2x Medium Leeks
  • 200g Button Mushrooms

Instructions:

  1. Preheat Oven to 180C/Gas5.
  2. Slice the white part of the leeks into large chunks. Place on a deep baking dish with the mushrooms and coat with 1 tbsp of oil. Place in the oven and roast for 15-20 minutes.
  3. In a large frying pan, heat up 1 tbsp of oil and fry the pork chops until each side is nicely browned. Add the jar of sauce and bring to the boil.
  4. Place the sauce and pork chops into the baking dish with the leeks and mushrooms and mix well.
  5. Cover with foil and place into the oven for 25-30 minutes until the sauce is piping hot and the pork is cooked through.
  6. Serve with roast potatoes and vegetables.
